This list makes sense only for the cauldrons/goat shrines in single player. You can save, use the shrine and restore if you don't like what it did. In multiplayer, simply stay away from them if you value your mana. I've omitted those shrines where the result is obvious.

Time cannot diminish the power of steel All weapons repaired
While the spirit is vigilant, the body thrives Mana Shield is casted upon the player

Fountains and Springs

Blood Fountain Health replenished by one point per use Can be used repeatedly
Purifying Spring Mana replenished by one point per use
Murky Pool Grants Infravision
Fountain of Tears One random attribute gains a point while another random attribute loses one
